Pecan Pie Cake

Ingredients:

  • 1 box yellow cake mix
  • 1/2 cup unsalted butter, melted
  • 3 large eggs
  • 1 cup light corn syrup
  • 1 cup firmly packed brown sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups pecans, chopped

Instructions:

  1. Preheat the oven to 350°F (180°C) and grease a 9x13 inch baking dish.
  2. In a large mixing bowl, combine the cake mix, melted butter, and 1 egg. Mix well.
  3. Spread the cake mixture evenly into the prepared baking dish.
  4. In another mixing bowl, whisk together the remaining 2 eggs, corn syrup, brown sugar, and vanilla extract.
  5. Stir in the chopped pecans.
  6. Pour the pecan mixture over the cake mixture.
  7. Bake for 35-40 minutes, or until the top is golden brown and the center is set.
  8. Allow the cake to cool completely before serving.
